Morocco is the undisputed culinary star of
North Africa. Moroccan cuisine is characterised by rich spices such
as cumin, coriander, saffron, chillies, ginger and paprika. Harissa, a
paste of garlic, chillies, olive oil, and salt, is occasionally used for
more firey dishes. Couscous (granular
semolina) is central to Moroccan cuisine and is often cooked with spices,
vegetables, nuts, and raisins. It makes a meal in itself or is topped with
rich stews and roasted meats. Lamb is a principal meat - Moroccan roasted
lamb is cooked until tender enough to be pulled apart and eaten with the
fingers. It is often topped with raisin and onion sauces. Meat and
fish can be grilled, stewed, or cooked in an earthenware tagine (the name
for both the pot and the dish). Savoury foods are enhanced with fruits,
dried and fresh - apricots, dates, figs, and raisins, to name a few.
Nuts such as pine nuts, almonds, and pistachios also turn up in unexpected
places!
Moroccan sweets are rich and dense confections of cinnamon, almond, and fruit perfumes that are rolled in filo dough, soaked in honey, and stirred into puddings. And of course you can't escape Morocco without trying the mint tea, served every hour of the day, it's the country's national drink! A mixture of gunpowder tea (Chinese green tea rolled into small pellets) and fresh mint, mint tea is offered as a gesture of hospitality and welcome. We generally eat on-site. On a PASSION Safari you can expect to experience the very best of Moroccan home cooking. |

What's the accommodation like?
Due to the nature of the areas in which we paraglide, accommodation is often basic and rudimentary. Usually there are beds and at the very least, mattresses. Our priorities are cleanliness and hospitality! We suggest you bring a sleeping bag for extra bedding as it can get cold at night. If you prefer not to room-share please let us know.

You will need to bring the following:

Even in the spring and autumn temperatures are usually very comfortable during the day (shorts and T-shirt weather), but please be prepared for much cooler conditions at night when temperatures can drop considerably particularly away from the coast and in the High Atlas and Anti-Atlas Mountains.
What are the entry formalities for Morocco?
All visitors need a passport to gain entry to Morocco. No visas are required for full passport holders of the UK, Ireland and most EU countries.
Do I need any vaccinations and are there any health risks?
Ideally you should see your GP or travel clinic at least 6 weeks before your departure for general advice on travel risks. They will probably advise that you be up-to-date with your polio, typhoid and tetanus injections. Some medical clinics might also recommend a hepatitis A vaccine. There is no malarial risk in the areas in which we operate.
The most likely health risk you will encounter will be the sun! As the Australians like to say, Slip, Slap, Slop: Slip on a shirt, slap on a hat, and slop on the sunscreen!
Please book your flights to and from Morocco only when your place is confirmed. We suggest you book early to find the best prices. Book your flights to arrive on the first day of your safari and depart on the last day. For example, if your trip is a one week Saturday to Saturday safari, your flights should arrive and leave on those days. Typically pilots like to arrive and leave in the mornings so that they can fly from day1. Of course if you prefer afternoon flights we can still accommodate you. Contact us if you are unsure.
We will be waiting for you at the airport ready to ferry you directly off to our first flying base.
